Sugar
This After Dark event got the holiday season off to a sweet start, presenting art, science, and history related to sugar—along with some sugary treats from San Francisco’s food carts.
Culinary historian Michael Krondl took visitors through the history and culture of desserts, discussing how our taste for sweetness has led to some of humanity’s worst crimes while inspiring some of its most delightful inventions. Master chef Alexandre Trouan was on hand to blow and pull sugar into fanciful forms, while Cake Vault, an artwork created by Scott Hove using the tools and techniques of confectioners, was on display. In addition, we looked at the chemistry of sweeteners, explored Gymnema sylvestre—an herb that blocks sugar receptors, and made cotton candy.
