2 oz No. 209 Kumquat Cilantro Infused Gin*
¾ oz Oroblanco grapefruit juice**
½ oz lemon juice
½ oz Gran Classico Bitter
Oroblanco grapefruit for zesting
Shake ingredients over ice and strain into a coupe or martini glass. Zest the Oroblanco over the top.
*No. 209 Kumquat Cilantro-Infused Gin
1 liter gin
1 bunch of cilantro, chopped
1 pint kumquats, sliced
Place chopped cilantro and sliced kumquats in a jar with the liter of gin. Let sit 3 days, agitating 1–2 times per day. Strain the gin into a clean bottle; discard kumquats and cilantro.
**An Oroblanco is a cross between an acidless pomelo and a white grapefruit. Developed at UC Riverside, it is sweeter and slightly larger than a grapefruit, with fewer seeds, with a thick, bright green or golden rind.
