2 ½ oz No. 209 Gin
½ oz Carpano Dry Vermouth
1 oz shiso foam*
Combine 209 Gin and vermouth and stir in a yarai or similar mixing glass. When properly diluted, pour the cocktail into a coupe glass and top with shiso foam.
To prepare the flavored foam, first make a syrup. Bring desired amount of water to a boil, and add shiso leaves. Lower heat and steep on simmer for 20 minutes. Add same amount of sugar as water, and stir to incorporate. Strain out solids. Add half a teaspoon of plain gelatin per cup of syrup. Stir to dissolve completely; this mixture will not solidify. Pour through an iS container over nitrogen.
